Vinification:  Destemming and pressing of the grapes, fermentation in a stainless steel autoclave at controlled temperatures between 24 and 28 °C using the 'emergen cap' technique for 8 to 12 days, followed by continuous pressing and pumping to achieve optimal color extraction and good dissolved oxygen. After bottling in the summer after the harvest, the wine matures for another 9 months.

Color: Good, bright ruby red color.

Smell/Taste:  Very refined, expressive aromas of raspberry, wild strawberry, and blood orange are combined with hints of vanilla and underbrush. Then fresh and juicy, with laser-like acidity, complemented by nuances of sour red cherry and spicy underbrush.  Sufficient volume and complexity in the long, clean finish. Fermented in stainless steel autoclaves at controlled temperatures between 24 and 28 °C using the emerged cap technique for eight to twelve days, followed by continuous punching down and pumping over to achieve optimal color extraction, this is a very refined and juicy wine. This wine has an almost unique story, as a portion of the proceeds from sales has been invested in the meritorious project of building the “Fabio Costantino” Medical Center in the city of Glei, in the West African Republic of Togo. The wine’s name, Fabè (an abbreviation or slang for Fabio), is a tribute to Fabio Costantini, a good family friend who passed away at a very young age. Drinking period: 2026-2031
