Vinification: the grapes are harvested late. This is followed by a long (skin) maceration, followed by alcoholic fermentation at controlled temperature in stainless steel tanks. After bottling, the wine ages for another 6 months in the bottle.
Color/ bouquet/ flavor:The wine has a straw-yellow color. On the nose, citrus fruits, white flowers, and aromatic herbs. On the palate, tropical fruit and soft acids. Structured wine.
Score and comment:This is a lesser-known gem from the north of the Marche in the province of Pesaro-Urbino. It is a more than worthy counterpart to its much better-known neighbor the Verdicchio, very versatile.
Dish combinations:
- Various dishes with shellfish or white fish.
- Sea bass in three ways (you choose the topping for your sea bass, e.g., pancetta, anchovies, tomato, and basil). Add some fried potatoes seasoned with rosemary.
- Scaloppine alla pizzaiola (veal cutlets with tomato and oregano).
- Casarecce with scampi, tomato, and pistachios
