Vinification: Gentle and slow pressing of the grapes, temperature-controlled spontaneous fermentation. 1 year of aging on lees in steel tanks with light battonage and 12 months in bottle.

Color/ bouquet/ flavor:The wine has a golden yellow color. On the nose floral, on the palate hints of stewed fruit and honey. Juicy in the finish with a light herbal touch.

Score and comment:This Piedmontese gem from the Colli Tortonesi area is one of the emerging treasures from the region. The aging potential is great (+10 years). Over the years, the wine becomes more complex and rounded, and it can compete with the great white wines from Burgundy. Not to be missed! Dish combinations:

• Sea bass in a salt crust (you can add all kinds of grilled vegetables to this). If you want to finish it off, add a balsamic dressing.
