Vinification: Careful selection of hand-picked grapes, maceration and fermentation for 15-20 days in stainless steel barrels at a controlled temperature of 25°C. Malolactic fermentation in steel. Aging first for 6 months in stainless steel tanks; and then 3-6 months aging in bottle.

Color/ bouquet/ flavor:The wine has a ruby red color. On the nose, notes of herbs and balsamic, licorice, and red fruits. On the palate, velvety soft, with a good structure.

Score and comment:Very elegant wine. Price/quality a winner! Very unique as a monocepage, as Perricone is mostly used in a blend with Nero D’Avola.

Dish combinations:

• Pasta with Trapanese pesto (pesto based on tomato and almonds).
• Swordfish and/or tuna with caponata (sweet and sour eggplant)
