Region: Veneto – The vineyards, located on the slopes of Colognola ai Colli, are cultivated according to a philosophy of regenerative viticulture by implementing biodiversity and without the use of pesticides and herbicides.
Each bunch embodies the characteristics of the terroir in which it ripens, from volcanic to basalt soil. Deep roots of old plants, which over the years have developed fruits with intense and mineral flavors.

Vinification: Sassi Mori is produced with grapes that are extremely selected for their health and the degree of aromatic ripeness. Only with careful selection is it possible to vinify with white grapes in fermentative maceration, i.e. in contact with the skin before and during the alcoholic fermentation.
The maceration on the skins lasted almost the entire fermentation phase (15 months), managed with delicate pumping for its management. This method allows us to extract all components of the skin in the best possible way to enrich the final wine with tannin structure, body, and aromas. After separating the skins, the new wine was aged "sur lies" for 15 months according to 3 different paths: 60% steel, 35% large oak barrels, 5% ceramic pots.
Sassi Mori is thus born from the assembly of the wine at the end of the 3 different paths in steel, wooden, and ceramic barrels.and matures for at least another six months in the bottle.

Smell/ Taste: Accurate, subtle yet constructive aromas of stone fruit, minerals, and nutmeg. Bright and energetic on the palate, and not to forget extremely complex in the mouth, with a wild array of dried fruits (apricot, almond, hazelnut), mineral and herbal aromas, a youthful chewy yet polished texture, and remarkable focus. Hints of gingerbread, salty, fresh, and intense finish.

Pork cheeks, Livornese fish soup, Turbot, Fried scallops, Sea bass with a salsa verde.

“Casato is making an amazing array of outstanding Garganega wines, and today has to be considered one of the ten or so best producers of such wines. Carlo Casato’s very old vines (65 years and more) are planted facing mostly eastwards on steep volcanic hills of Colognola ai Colli and express the greatness that Garganega is capable of.
"Very rich complex Garganega wine from 70-year-old vines! Due to the maceration on the skins, this produces entirely different and more complex wines than its popular counterpart, the Soave Classico. Surprising and also very good!"
