Vinification: Aging partially carried out in cement tanks, partially in French oak barrels of 500 liters from the central mass of the second and third passage.

Color/ bouquet/ flavor: Ruby red in color with light violet reflections, the nose reveals fragrant and intense notes of violets, raspberries, and red fruit; round taste with good structure.

Score and comment: I Fabbri has quickly become a wine estate to say "You" to. In a competitive region like Tuscany, that says a lot. Sussana lets the terroir speak in her wines; the purity and precision with which the wines are made is impressive! Scores: 2 bicchieri Gambero Rosso 2015, 2016, 2017, 2018, 2019.

Dish combinations:

• Ribollita (a traditional Tuscan winter soup with, among other things, cannellini beans, savoy cabbage, potatoes).
• Peposo (slow-cooked beef stew with black peppercorns) combines with mashed potatoes or polenta.
