Producer: Cantina Montenigo
Location: The vineyards are located in Montorio (Val Squaranto), a few kilometers from the center of Verona, in the Veneto region
Variety: Corvina, Corvinone, Rondinella, Molinara and Oseleta
Vintage: 2020
Vinification: The fresh grapes, just picked, are immediately pressed in oak barrels where spontaneous fermentation begins, with only temperature control. At the end of fermentation, the wine rests in cement awaiting the pressing of the Recioto, which will take place in early January. Once this is reached, the "Ripasso" is performed, a traditional process that consists of bringing into contact for a few days with the Recioto skins rich in colorants, sugars, and aromatic substances typical of drying to a a firmer, softer, and more aromatic wine available. Aged at least 30 months in oak barrels. Bottled unfiltered and with a low sulfite content.
Color: Ruby red color with light orange reflections
Aroma: Ripe red fruits, spices, and a light touch of cocoa.
Taste: The taste is enveloping, soft, with a return of crisp fruit, red berries, and cherry
Dishes to pair with: Ideal to accompany main dishes, such as rabbit, roast, and grilled meat.
Aging potential: 2030
At what temperature to drink: The ideal serving temperature is between 16° and 18°C
