Region: Veneto – The vineyards, located on the slopes of Colognola ai Colli, are cultivated according to a philosophy of regenerative viticulture by implementing biodiversity and without the use of pesticides and herbicides.

Each bunch embodies the characteristics of the terroir in which it ripens, from volcanic to basalt soil. Deep roots of old plants, which over the years have developed fruits with intense and mineral flavors.

Variety: 100% Garganega

Year: 2020

Vinification: 80% of the grapes in destemmed must were macerated overnight in the press at low temperatures and then subjected to gentle pressing a few days before fermentation of the must.

At the same time, the remaining 20% of the grapes were macerated on the skins during the fermentation phase with careful pumping over for almost the entire duration of the fermentation.
The fermentation then took place in steel at a controlled temperature (14-16°C) for 20/25 days. Spontaneous malolactic fermentation carried out at 80%.

Aging in steel tanks "sur lies" for nine months, with a minimum of three months aging in bottle.

Color: Strogeel
Smell/ Taste: The dessert wine has delicate yet expressive aromas, starting with the first floral scents with nuances of honey and moving on to light citrus tones. The sip is full and enveloping, the tannin structure is present but silky soft, and in combination with the wonderful flavor, it gives energy and length to the palate.

Dish combinations:

  • Pork cheeks, roasted pork with bacon bits. Hearty white fish dishes.
  • Livornese fish soup.

Comments Ian D’Agata: Casato is making an amazing array of outstanding Garganega wines, and today has to be considered one of the ten or so best producers of such wines. Carlo Casato’s very old vines (65 years and more) are planted facing mostly eastwards on steep volcanic hills of Colognola ai Colli and express the greatness that Garganega is capable of.

"Very rich complex Garganega wine from 70-year-old vines! Due to the partial maceration on the skins, this produces entirely different and more complex wines than its popular counterpart, the Soave Classico. Surprising and also very good!"
